The grease and odours are then either extracted through an external wall to outside, or alternatively filtered through a carbon filter and the clean air recirculated back into the room.   Consisting of a main canopy section and vertical chimney section, cooker hoods house a powerful motor that is used to draw the air in.   There are various types and styles available as outlined below - generally chimney styled, with the whole unit designed to be visible, through to integrated hoods that can be housed in a kitchen cupboard.


Styles


Cooker hoods vary greatly in style.   There are chimney hoods, with slanted canopy sections, that work well with more traditional kitchens as well as contemporary styles.   Slab style hoods with rectangular, horizontal canopies tend to sit well in more modern, sleeker kitchens, as do hoods with curved or straight glass canopies.   Some manufacturers - Falmec for example - offer patterned tempered glass hoods.


Integrated Hoods


Integrated hoods are ideal if your cooker is built in to a chimney breast, or under a row of kitchen cupboards.   They are designed to fit into enclosed spaces and as a result are finished on the underside only - the only part that is visible.   Integrated hoods can be used to extract or recirculate as per any other hood style.


Island Hoods


Island hoods are designed for kitchens in which the cooker is positioned away from the wall.   They are finished on all four sides, as all are visible.   Island hoods in general tend to be of a more modern style, and are usually stainless in finish.   Some manufacturers, Britannia and Falmec for example, do offer variation in hood colour and finish.


Features


All cooker hoods, whether they are chimney style, integrated or island hoods are powered by a motor that sucks in the air from the immediate area and then either expels it into the outside air or passes it through carbon filters and back out into the room.   Therefore, the power of the motor effects the efficiency of the cooker hood and suitability to your room - the larger the room, the greater powered hood you require.   The power of a cooker hood is measured in cubic meters per hour - how many cubic meters of air it can extract in one hour.


Controls - Cooker hoods are controlled by either push buttons, sliders or touch screens which are found on either the front edge of the hood or underneath.


Lights - Hoods invariably feature lights - mainly halogen - that illuminate the hob area while cooking.


Rails - Some hoods, usually the traditional chimney style, feature rails across the front edge that can be used to hang cooking utensils off.


Delayed stop - A useful feature if you want to join guests at the dinner table after cooking, the delayed stop will turn the hood off after a set period of time, usually 15 minutes or so.

The subjects of the independent test were the Electrolux Inspiro, the Miele H5681B and the recently launched De Dietrich oven.   The test comprised of each oven cooking an identically sized piece of beef sirloin from a cold start, using the relevant &lsquo;roast beef&rsquo; settings on each.

This gives the advantage of being versatile enough to manage different dishes in different temperature zones (roast potatoes in the top, fruit pie at the bottom) but has the disadvantage of taking longer to cook a full meal.


Fanned ovens have been around for quite some time now.   They work via a heating element coiled around a fan - the fan distributes the heat evenly across the whole oven cavity from top to bottom.   This reduces warm up and cooking times and as a result is more efficient than conventional ovens.


Multifunction ovens offer the best of both worlds - various heat sources to offer both conventional and fanned cooking, in addition to a grill function.   In addition to fanned, other cooking modes include bottom or top elements according to what you&rsquo;re cooking - a quick pizza can be cooked using the bottom element only for example, to give a crispy base. When installing a gas oven or gas hob, we strongly advise consulting a local gas engineer.   It is important the the engineer you consult is Gas Safe Regsitered - you can visit gassaferegister.co.uk and search for a qualified and approved local engineer directly on their website.   Please bear in mind that not only is fitting a gas appliance yourself extremely dangerous and against regulations, but manufacturers&rsquo; warranties are void unless the appliance has been installed by a qualified and approved engineer.


An electric oven will ordinarily require hardwiring into a fused box on the mains circuit due to the draw required.   Again, we strongly recommend consulting a qualified electrician.   This is also the case for ceramic and induction built in hobs.


Should the appliance utilise a standard 13amp plug, it may just be a case of installing it yourself into the kitchen unit or carcass.


Positioning Advice


Built in ovens and hobs should ideally be positioned on an external wall wherever possible - this will make ventilating them easier, as the shortest possible route to the outside means much greater efficiency.


Built in hobs are normally fitted (either flush mount or built in) into the worktop over a 600mm wide kitchen unit.   Hobs should not be positioned under a window wherever possible.


Installing a refrigerator adjacent to an oven will increase the amount of energy needed to run both appliances, so it is well worth avoiding this.


Extractor hoods are extremely beneficial, almost essential, in the removal of steam, excess heat and cooking odours.   Hoods can either be extracted through an external wall, or made to circulate filtered air via the use of odour removing carbon filters.


Built Under Ovens


Built under ovens, as their name suggests, are ovens that have been designed to be situated under the worktop. 600mm single ovens and 720mm double ovens can be used, however it is worth noting that 600mm single ovens will require a spacer panel to make up the height between the kitchen plinth and worktop.


Flame Supervision Device (FSD)


A flame supervision device (FSD) or flame failure device (FFD) is a safety feature that detects if a flame has been extinguished on either a gas hob or a gas oven.   If it detects such an occurrence, the gas supply is shut off immediately.


It is worth noting that as from 31st March 2010, all gas appliances manufactured are required to have an FSD/FFD fitted as standard.   Any gas appliances available WITHOUT these are likely to be old models.

Enamel


The enamel surface inside an oven is, when viewed extremely closely, made up of tiny bumps.   In the case of an easy clean enamel, these bumps are closer together and a lot less pronounced.   This stops grease and cooking debris from penetrating too far into the enamel, therefore making manual cleaning easier and less of a chore.


Catalytic Liners


Catalytic liners are coated and, when the oven reaches a specific temperature, oxidise any grease and residue.   Although extremely effective, any ares of the oven cavity not lined - for example the door - still require manual cleaning.


Pyrolytic Liners


By far the most effective cleaning method currently available, the Pyrolytic cleaning function works by heating the oven cavity to an extremely high temperature - around 500 degrees - to burn off any residue.   At the end of the Pyrolytic cycle, all that remains of any grease is a small pile of ash in the bottom of the oven that can be swept out.   The effectiveness of Pyrolytic is due to the fact that it cleans all areas of the oven cavity, not just the liners.   Although slightly more expensive initially than Catalytic ovens, keeping an oven clean with regular Pyrolytic cleaning ensures optimum efficiency and therefore lower running costs.

The first brand to utilise induction hobs in their collection was Stoves, who are still at the forefront of induction with their current hob range.


How do induction hobs work?


Powerful electromagnets below the surface of the hob agitate the molecules of the ferrous metal of the pan, creating heat.   Variation in heat is caused by controlling the flow of electricity to the magnet, making adjustment in temperature immediate.


Advantages


The two main advantages of induction hobs are speed and efficiency.   Induction hobs power up instantly and switch of immediately, making it as controllable and responsive as gas.   It can take as little as 5 seconds to bring a pan of water to the boil, and reducing the temperature to simmering is just as quick due to the lack of any residual heat.


Because of the way induction transfers heat - ie directly to the pan - no energy is wasted via transferral of heat from the element to the glass surface then through to the pan.


Suitable cookware


Because of how induction hobs transfer heat, only certain types of pan will be effective.   Look for a pan bearing the &lsquo;Class Enamel&rsquo; logo on its base, or &lsquo;Suitable for Induction&rsquo; on the packaging.


Generally all iron pans will work perfectly with induction (take care not to scratch the glass surface of the hob though), and manufacturers now make aluminium or stainless pans with a layer of suitable material in the base.

Gas ovens tend to be the choice of the traditionalist, and offer a fantastically moist heat, which is ideal for baking cakes and for roasting meat and poultry - the moisture prevents the food from drying out while cooking.   The gas oven also offers a gradient heat distribution - the cavity is hotter at the top than at the bottom - making the oven considerably more versatile than an even heat.


Electric ovens are easier to control and are more responsive to adjustments in temperature.   The heat inside an electric built in oven is constant throughout ensuring even cooking, and an electric oven makes browning or crisping food a lot easier than a gas oven.   Another advantage of electric built in ovens is the variety - there is a far greater choice of electric ovens available than their gas counterparts.

Gone are the 600GR, 700GR and 900GR Rotostar models, along with the 600G single oven and 700GDO and 900GDO built in double ovens.


Stoves have confirmed replacements for the 600G and 900GDO models in stainless and black in the form of the 600GT and 900GDOT respectively.   The specification remains exactly the same for both with the addition of the FSD to meet UK regulations.   The replacement for the 700GDO will be released imminently.


All replacement models are expected to be available for delivery from the start of April onwards.
